Easy Bruschetta Pasta

This bruschetta pasta is the perfect dish to make when you want to impress your friends without having to do much more than chop some tomatoes and basil. It's so easy throw together on a hot summer night when you want something quick but don't want to sacrifice flavor!

Ingredients
  

  • 16 ounces penne pasta
  • 3 cups chopped fresh tomatoes
  • ¾ cup fresh basil chopped
  • ½ olive oil
  • 4 cloves garlic minced
  • 1 teaspoon dried oregano
  • 3 tablespoons balsamic vinegar
  • ½ cup grated Parmesan cheese plus more to taste
  • Salt and freshly cracked black pepper to taste

Instructions
 

  • Bring a large pot of heavily salted water to a rolling boil. Add the penne and cook for 8-10 minutes, or until al dente.
  • While the pasta boils, combine the tomatoes, basil, olive oil, garlic, and oregano in a large mixing bowl.
  • Add the drained pasta into the tomato mixture. Stir in the balsamic vinegar and Parmesan cheese. Season generously with salt and pepper.
  • Serve with additional Parmesan cheese, if desired.
