Cranberry Orange Baked Oats for One

This cozy breakfast treat is studded with juicy, tart cranberries and bright orange zest. If you scale this recipe up, make each serving in a separate baking dish. Note that if microwaving multiple dishes at once, you may need to extend the cooking time by a minunte or two.

Ingredients
  

  • ½ cup rolled oats
  • ¼ cup milk
  • ¼ cup apple sauce
  • 1 large egg
  • 1 Tablespoon maple syrup
  • ¼ teaspoon baking powder
  • 1 pinch salt
  • cup fresh or frozen cranberries
  • 2 teaspoons orange zest

Instructions
 

  • Spray an 8 ounce ramekin or coffee mug with cooking spray.
  • Add the oats, apple sauce, egg, syrup, baking powder, and salt to a blender. Blend until smooth, about 1 minute.
  • Pour the oat mixture into your prepared baking dish. stir in cranberries and orange zest.
  • Microwave for 2-3 minutes, or until the top is set and the edges start to pull away from the sides of the dish.

Notes

Instead of microwaving, you can bake these oats at 350°F for 25 minutes.
