This month’s coffee is a Peach Cobbler Shaken Espresso, made with homemade peach syrup that’s delicious in summer drinks.

There’s nothing that says summer quite like fresh peaches, and I’ve been thinking about a peach coffee syrup ever since I had a peach latte at a local coffee shop a few years ago and I’m kicking myself for waiting so long.

I started by making a simple syrup using brown sugar for an earthy, caramelized flavor, then blended in peaches, vanilla, and a touch of cinnamon. To keep the flavor peach-forward, I blend everything together instead of straining it. This gives the syrup a little more body, closer to a thin sauce, and a very intense peach flavor.

I was hooked from the very first sip, after which I exclaimed “it tastes like summer!” Specifically, it tastes like like topped with vanilla ice cream, except cold, caffeinated, and extremely necessary.

You don’t need to limit yourself to just coffee though! Use this peach syrup for drinks like iced tea, lemonade, cocktails, or just add some to a cold glass of seltzer. I’ve also used it as an ice cream topping or swirled it into a vanilla milkshake.

What Does Peach Syrup Taste Like in Coffee?

Peach and coffee might sound a little unexpected, but it’s so good. Especially when the peach flavor is warm and jammy instead of sticky and candy-like. Brown sugar gives the syrup a deeper caramel note, while vanilla and cinnamon add a bakery vibe.

When you use it in a shaken espresso, you’ll taste the coffee first, then get the sweet peach flavor on the back end with a lingering peachy aftertaste.

Peaches: Fresh peaches are perfect in peak summer, but honestly frozen peaches work even better because their flavor is more consistent (said by someone who once wanted to bring a pitcher of homemade bellinis to a blogger brunch and ruined the whole batch by throwing in one iffy peach). Plus you save yourself the step of having to peel and slice them.

Brown sugar: This gives the syrup a deeper, cobbler-like flavor. I used light brown sugar, but if all you have is dark brown you can use half of that and half regular white sugar.

Vanilla extract: For that hint of bakery warmth.

Cinnamon: Just enough to make it taste like peach cobbler.

Salt: A tiny pinch of kosher salt or sea salt balances the flavors and makes them pop.

How to Make Brown Sugar Peach Syrup

Add sliced peaches, brown sugar, water, vanilla, cinnamon, and salt to a small saucepan. Bring everything to a simmer and cook until the peaches are softened.

Blend the syrup until smooth. This gives you a thicker peach sauce with more real peach flavor. If it separates in the fridge, give it a shake or stir before using it.

For a thinner peach syrup, do not blend. Gently mash the peaches with a heavy spoon and let the syrup cool, then strain the peaches out.

Tips for the Best Peach Syrup

  • Use ripe peaches when possible. The better your peaches taste, the better your syrup will taste. Frozen peaches will have the most consistent flavor.
  • Don’t skip the salt. It doesn’t make the syrup salty; it makes the peach flavor taste more peachy.
  • If the syrup tastes flat (especially if you used fresh peaches) add a tiny bit of lemon juice at the end. Acid can balance the sweetness, especially if your peaches are very ripe.

How to Use Peach Syrup in Drinks

This brown sugar peach syrup is amazing in coffee, but don’t stop there. Try it in:

How to Make a Peach Cobbler Shaken Espresso

Add hot espresso and brown sugar peach syrup to a cocktail shaker or lidded jar. Add ice and shake hard until the espresso is chilled and foamy.

Fill your glass with fresh ice. Pour in the shaken espresso, then top with milk.

If you want to be extra, make a nilla wafer or graham cracker rim before filling your glass. To to this, crush a few Nilla wafers until they’re fine crumbs, then mix them with a pinch of cinnamon and a tiny pinch of salt. Dip the rim of your glass into peach syrup, then into the crumbs.

How long does peach syrup last?

Store the peach syrup in an airtight container in the refrigerator for up to 1 week.

Can I freeze peach syrup?

Yes. Freeze it in an ice cube tray, then transfer the cubes to a freezer bag. It’s great in iced tea!

Can I make shaken espresso if I don’t have an espresso machine?

Yes. Use 1/3 cup strong brewed coffee or cold brew concentrate. The drink will taste a little less intense than the espresso version, but it will still be delicious.

What does shaking the espresso do?

Shaking the espresso instead of pouring it over ice into your glass chills it faster, resulting in a less watered down drink. It also aerates the drink so the natural oils in the crema disburse and make the drink frothy and creamy, even before you add any milk.
